From a strategic point of view, this wine represents a real challenge for the future of the A Solatio farm, as it aims to soften the well-known hardness of Sangiovese grapes and propose this wine as a business card for both Tuscany and for the farm itself, by bringing it to a level of refinement comparable to many more famous wines.
The heart of the challenge lies in the continuous research to make it more lovable (in the sense that it can be loved more), without employing softer grapes, which are equally noble, instead by adopting particular precautions especially in the vineyard.
It takes its name from the selection of only Sangiovese grapes and vinified, indeed, 100% in pure Sangiovese.
The vineyards in which the grapes are chosen have, in part, a southern and partly west exposure and are located at an altitude of about 200 meters above sea level, with a grape production of about 50 quintals per hectare.
In the cellar, it is vinified in steel vats with permanence on the grapes’ skins at a controlled temperature and daily pumping over for a period of about 20 days.
With good acidity and excellent structure but, at the same time, easy to approach and good drinkability; we recommend it to be consumed with grilled meats, Tuscan salami, and cheeses in general or blue cheeses.
As with any structured red wine, it is necessary to open it a few hours before consumption to fully appreciate all its facets.
