From a strategic point of view, this wine represents a real challenge for the future of the A Solatio farm, as it aims to tame the well-known hardness of Sangiovese and presents this wine as a “business card” both of Tuscany and of the farm itself and brings it to a level of refinement worthy of much more noble wines. The heart of the challenge lies in the continuous research being done to make it more lovable (in the sense that it can be loved more), without resorting to softer and more fragrant grapes, which are nonetheless equally noble, but by adopting particular precautions especially in the vineyard.
It takes its name from the selection of only Sangiovese grapes, vinified 100% pure. The vineyards in which the grapes are chosen have partly a southern and partly west exposure and are located at an altitude of about 200 meters above sea level, with a grape production of about 50 quintals per hectare.
In the cellar it is vinified in stainless steel vats and kept on the skins at a controlled temperature and mixed daily for a period of about 20 days. With good acidity, well-bodied, but, at the same time, easy to approach and good drinkability; we recommend it to be consumed with grilled meats, Tuscan salami and cheeses in general and blue cheeses.
