Seasoned Pecorino is a cheese that lends itself very well to the tasting of structured and important wines. The artisanal processing makes it possible to obtain a product with the intense aromas and strong flavour that characterise authentic Seasoned Pecorino. Near the end of the maturing period, it is greased with olive oil to protect the rind and enhance the sweetness and delicacy of the mixture.
To appreciate the long, slow maturation of this Seasoned Pecorino, it can be tasted on its own, preferably accompanied by fig or blueberry or red pepper preserves. The pairing we propose is with our Purezza: an aged Sangiovese that will bring out all its best taste notes.
If the package remains intact under vacuum, it can last up to 6/7 months in the fridge at a temperature of 4° / 7° C. (39°/44° Fahrenheit). Once opened, it is recommended to consume it within 4/5 weeks, storing it wrapped in cling film.
